MEŞE PALAMUDU UNUNUN FONKSİYONEL GIDA POTANSİYELİ: BESİN DEĞERİ VE SAĞLIK ETKİLERİ

Özet

Meşe palamudu, holm meşesi (Quercus rotundifolia) ve mantar meşesi (Quercus suber) gibi türlerin meyvesi olup günümüzde esas olarak hayvan yemi amacıyla kullanılmaktadır. Bununla birlikte, üretilen meşe palamudunun önemli bir kısmı tarlalarda herhangi bir değerlendirmeye tabi tutulmadan kalmaktadır. Gıda güvenliği kaygılarının artması ve yeterince değerlendirilmeyen tarımsal kaynakların potansiyel sağlık yararlarına yönelik ilginin yükselmesi, meşe palamudu gibi az kullanılan ürünlerin yeniden gündeme gelmesine yol açmıştır. Meşe ağacının meyvesi olan meşe palamudu, uzun zamandır dünyanın farklı kültürlerinde önemli bir besin kaynağı olarak kullanılmıştır. Köklü bir mutfak geleneğine sahip olmasına karşın, günümüzde bu değerini büyük ölçüde kaybetmiştir. Yüksek nişasta içeriği nedeniyle meşe palamudu, başlıca un üretiminde değerlendirilmekte ve meşe palamudu unu, gıda üretiminde geniş bir uygulama alanında kullanılmakta ve gulten içermemesi nedeniyle de tahıl ununa alternatif bir hammadde olarak kabul edilmektedir. Bu bölümde, insan beslenmesinde bir bileşen olarak meşe palamudu ununun fizikokimyasal özellikleri ve fonksiyonel nitelikleri ele alınmaktadır.
